Ingredients
  

  • 2 cans of black-eyed peas 15 oz.
  • 1 can of black beans 15 oz.
  • 1 can of sweet corn 15 oz.
  • 1 pound of firm Roma tomatoes.
  • 2 large ripe avocados.
  • 1 bunch of fresh cilantro.
  • 1 small red onion.
  • 1/2 cup of olive oil.
  • 1/4 cup of red wine vinegar.
  • 1 tablespoon of sugar.
  • Salt and pepper to taste.

Instructions
 

  • Drain the beans and corn well. Rinse them under cold water. Put them in the large bowl.
  • Dice the tomatoes and red onion finely. Chop the cilantro leaves. Add them to the bowl.
  • Mix oil, vinegar, and sugar in a jar. Shake it until the sugar dissolves.
  • Pour the dressing over the vegetables. Stir everything gently with a spoon.
  • Dice the avocado last. Fold it in carefully. This keeps it from turning mushy.
