Ingredients
  

  • 1 cup unsalted butter softened.
  • 1 cup granulated white sugar.
  • 1 cup packed brown sugar.
  • 2 large eggs room temperature.
  • 1 tablespoon pure vanilla extract.
  • 2 cups all-purpose flour.
  • 1 teaspoon baking soda.
  • 1 teaspoon baking powder.
  • 1 teaspoon ground cinnamon.
  • 1/2 teaspoon table salt.
  • 2 cups old-fashioned rolled oats.
  • 2 cups semi-sweet chocolate chips.
  • 1 cup chopped pecans.

Instructions
 

Cream the Butter

  • Put the butter and both sugars in a bowl. Beat them until the mixture is very fluffy. This takes about three minutes with a mixer.

Add the Liquids

  • Add the eggs one at a time to butter. Pour in the vanilla extract and mix well. The batter should look very smooth and pale.

Mix Dry Ingredients

  • Whisk the flour, soda, and powder in a bowl. Add the cinnamon and salt to the flour. Stir them so they are well combined.

Combine the Two

  • Slowly add the flour to the wet batter. Mix on low speed so flour does not fly. Stop mixing as soon as the white disappears.

Stir in Oats

  • Add the rolled oats to the thick dough. Stir them in with a big wooden spoon. This gives the cookies a very chewy texture.

Fold in Treats

  • Add the chocolate chips and the chopped pecans. Fold them in gently by hand. Make sure they are spread through the dough.

Scoop the Dough

  • Use a large scoop to make big balls. Place them on a lined baking sheet. Space them out so they do not touch.

Bake Until Golden

  • Put the sheets in a 350°F oven. Bake for about 12 to 15 minutes. The edges should be brown and crisp.

Notes

  • Use room temperature butter for the best creaming.
  • Do not use instant oats for these cookies.
  • Use old-fashioned oats for a much better chew.
  • Toast the pecans before adding them to dough.
  • Chill the dough for one hour before baking.
  • Use a large scoop for very uniform cookies.
  • Do not overbake them or they get hard.
  • Add shredded coconut for even more flavor.
  • Let them cool on the pan for five minutes.
  • Sprinkle a little sea salt on top after baking.
