Ingredients

  • 1 15 ounce can pinto beans, rinsed and drained
  • 1 15 ounce can corn, drained
  • 4 cups beef broth
  • 1 packet 1 ounce ranch dressing mix
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese sour cream, green onions

Instructions
 

Brown the Beef

  • Heat olive oil in your pot. Add ground beef. Cook until browned. Break it apart. Drain excess fat.

Sauté Aromatics

  • Add chopped onion to the pot. Cook until soft. This takes about 5 minutes. Add minced garlic. Cook for one more minute.

Combine Ingredients

  • Stir in diced tomatoes. Add tomato sauce next. Pour in beef broth. Add kidney beans. Add pinto beans. Add drained corn.

Season the Soup

  • Sprinkle in ranch dressing mix. Add chili powder. Add cumin. Stir everything well. Season with salt. Add black pepper.

Simmer and Serve

  • Bring soup to a boil. Reduce heat to low. Simmer for 20-30 minutes. Let flavors blend. Serve hot. Add your favorite toppings.
