Ingredients

  • 2 pounds ground beef.
  • 1 cup whole milk.
  • 6 slices white bread.
  • 2 large eggs.
  • 1/2 cup grated Parmesan cheese.
  • 1 teaspoon seasoned salt.
  • 1/2 teaspoon black pepper.
  • 1/4 teaspoon cayenne pepper.
  • 1/2 cup fresh parsley.
  • 1 cup ketchup.
  • 1/4 cup brown sugar.
  • 1 teaspoon dry mustard.

Instructions

Prep the Bread

  • Tear the bread into small pieces. Place them in a large bowl. Pour the milk over the bread. Let it sit for five minutes. This makes the meatloaf very soft.

Mix the Meat

  • Add ground beef to the bowl. Add eggs and Parmesan cheese. Add salt, pepper, and cayenne. Toss in the chopped parsley. Use your hands to mix gently. Do not overmix the meat.

Shape the Loaf

  • Place a foil strip in the cooker. This helps lift the meat out. Shape the meat into a loaf. Place it inside the slow cooker. Make sure it fits well.

Make the Glaze

  • Mix ketchup and brown sugar. Add the dry mustard. Stir it until it is smooth. This glaze adds a sweet tang.

Add the Topping

  • Pour half the glaze on top. Spread it evenly over the meat. Save the rest for later. It adds great flavor.

Slow Cook

  • Cover the slow cooker with the lid. Cook on low for six hours. You can also use high heat. On high, cook for three hours.

Final Glaze

  • Add the remaining glaze at the end. Cook for 30 more minutes. This makes the top sticky and delicious.

Rest and Serve

  • Lift the meatloaf out carefully. Let it rest for ten minutes. This keeps the juices inside. Slice it and enjoy your meal.

Notes

  • Use lean ground beef for less grease.
  • Do not overwork the meat mixture.
  • Overmixing makes the meatloaf very tough.
  • Soak the bread well in the milk.
  • This creates a "panade" for moisture.
  • Use fresh parsley for the best flavor.
  • Let the meatloaf rest before you slice it.
  • Resting prevents the slices from falling apart.
  • Use foil handles to lift it easily.
