Ingredients
  

  • 1 bag 30 ounces frozen shredded hash browns.
  • 1 pound breakfast sausage or thick bacon.
  • 12 large eggs at room temperature.
  • 1 cup whole milk or heavy cream.
  • 2 cups shredded sharp cheddar cheese.
  • 1 red bell pepper finely diced.
  • 4 green onions sliced very thin.
  • 1/2 teaspoon garlic powder.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.

Instructions
 

Brown the Meat

  • Cook your sausage or bacon in a large skillet. Make sure the meat is fully cooked and brown. Drain the extra grease on a paper towel.

Prep the Slow Cooker

  • Spray the inside of your crockpot with cooking spray. This prevents the eggs and cheese from sticking. It makes cleaning the pot much easier later.

Layer the Potatoes

  • Place half of the frozen hash browns on the bottom. Spread them out to make an even layer. This creates a solid base for the casserole.

Add Meat and Veggies

  • Sprinkle half of the cooked meat over the potatoes. Add half of the peppers and green onions. Then, add a layer of shredded cheese.

Repeat the Layers

  • Add the rest of the potatoes on top. Follow with the remaining meat, veggies, and cheese. This ensures every bite has all the flavors.

Whisk the Egg Mixture

  • In a large bowl, whisk the eggs and milk. Add the salt, pepper, and garlic powder. Mix until the yellow and white are blended.

Pour Over the Layers

  • Slowly pour the egg mixture into the crockpot. It will seep down through the potatoes and meat. Do not stir the layers together.

Cook Low and Slow

  • Put the lid on the slow cooker tightly. Cook on "Low" for 7 to 8 hours. The eggs should be set and firm.

  • Use frozen hash browns to save a lot of time.
