Take the roast out of the fridge first.
Let it sit for 30 minutes at room temperature.
Pat it completely dry with paper towels.

Place the roast back in the pot.
Cover it tightly with the lid.
Cook for 2.5 to 3 hours total.
Check the internal temperature with your thermometer.
It should reach 135°F for medium-rare perfection.
Remove the roast from the oven carefully.
Tent it with foil for 15 minutes.
This allows juices to redistribute throughout the meat.
Slice against the grain into thin pieces.
Serve with the cooked vegetables and pan juices.
