Ingredients
  

  • 2 cans of golden hominy 15 ounces.
  • 2 cans of white hominy 15 ounces.
  • 1 cup of sour cream.
  • 2 cups of shredded cheddar cheese.
  • 1 can of chopped green chilies.
  • 1/2 cup of melted butter.
  • 1/2 cup of chopped green onions.
  • 1 teaspoon of chili powder.
  • 1/2 teaspoon of black pepper.
  • 1/2 teaspoon of salt.
  • 1 cup of crushed butter crackers.

Instructions
 

Preheat your oven

  • Turn your oven to 350 degrees. Let it get nice and hot. Grease your baking dish with butter.

Drain and rinse hominy

  • Open all four cans of hominy. Pour them into a colander. Rinse them well with cold water. Let the water drain out completely.

Mix the wet ingredients

  • Take your large mixing bowl. Add the sour cream and butter. Stir in the green chilies. Mix until the base is smooth.

Add the spices

  • Add salt and black pepper now. Sprinkle in the chili powder. This gives the dish a nice kick. Stir everything together very well.

Combine hominy and cheese

  • Fold the drained hominy into the bowl. Add half of the cheddar cheese. Mix it until the hominy is coated.

Transfer to the dish

  • Pour the mixture into the greased dish. Spread it out with your spoon. Make the top nice and even.

Add the toppings

  • Sprinkle the rest of the cheese on top. Add the crushed crackers over the cheese. This adds a great crunch.

Bake the casserole

  • Place the dish in the oven. Bake for about 30 to 35 minutes. Wait until the cheese is bubbly.

Notes

  • Rinse the hominy well. This removes the canned liquid taste. It makes the dish taste very fresh.
