Ingredients
  

  • 2 Cups All-purpose Flour
  • 1/2 Cup Sugar For Crust
  • 1 Cup Salted Butter
  • 4 Large Eggs
  • 1 1/2 Cup Sugar For Filling
  • 1/4 Cup All-purpose Flour For Filling
  • 2 Lemons Juiced And Zested
  • 1 Tbsp Powdered Sugar

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit first. Line your baking pan with parchment paper now. This prevents the crust from sticking to it.
  • Mix your flour, sugar, and cold butter together. Use a pastry cutter to make fine crumbs. Press this mix into the bottom of pan.
  • Bake the crust for about twenty minutes now. It should look slightly golden and firm. Remove it from the oven to cool slightly.
  • Whisk the eggs and sugar in a bowl. Add the lemon juice and zest slowly. Mix until the filling is very smooth now.
  • Pour the lemon mix over the hot crust. Be careful not to spill any liquid. Return the pan to the hot oven immediately.
  • Bake for another twenty to twenty-five minutes. The center should be set and not jiggly. Let the bars cool down completely at room temperature.

Notes

  • Use cold butter for a very flaky crust.
  • Zest the lemons before you squeeze the juice.
  • Tap the pan to remove air bubbles before baking.
  • Let bars cool fully before you try cutting them.
  • Sift the powdered sugar for a very smooth look.
