Ingredients
  

  • 2 heads of Romaine lettuce chopped.
  • 1 cup cherry tomatoes halved.
  • 1 cucumber diced.
  • 1/2 red onion thinly sliced.
  • 1/2 cup feta cheese crumbled.
  • 1/4 cup olive oil.
  • 2 tablespoons fresh lemon juice.
  • 1 teaspoon cracked black pepper.
  • 1/2 teaspoon sea salt.

Instructions
 

  • Wash the Romaine lettuce very well. Chop it into small, bite-sized pieces.
  • Slice the tomatoes, cucumbers, and onions. Keep the sizes even for a good crunch.
  • Mix oil, lemon juice, salt, and pepper. Shake them well in a small jar.
  • Put all vegetables into a large bowl. Pour the lemon pepper dressing over them.
  • Sprinkle the feta cheese on top. Toss gently so everything is coated.
