Ingredients

  • 1 box yellow cake mix.
  • 1 small box vanilla pudding mix.
  • 4 large eggs.
  • 1/2 cup cold water.
  • 1/2 cup vegetable oil.
  • 1/2 cup dark rum.
  • 1 cup chopped pecans.
  • 1/2 cup butter for glaze.
  • 1/4 cup water for glaze.
  • 1 cup sugar for glaze.
  • 1/2 cup rum for glaze.
  • 2 tablespoons maple syrup.

Instructions

Prep the Oven and Pan

  • Heat your oven to 325 degrees. Grease your bundt pan very well. Sprinkle pecans at the bottom of the pan.

Mix the Cake Batter

  • Mix cake mix and pudding mix together. Add eggs, water, oil, and rum. Beat well for two minutes until smooth.

Bake the Cake

  • Pour the batter over the pecans. Bake for 50 to 60 minutes. Check it with a wooden toothpick.

Make the Maple Rum Glaze

  • Melt butter in a small pan. Stir in sugar, water, and maple syrup. Boil for three minutes while stirring.

Add Rum to Glaze

  • Remove the pan from the heat. Carefully stir in the dark rum. It will bubble a lot.

Soak the Cake

  • Prick the warm cake with a fork. Pour half the glaze over the cake. Let it sit for ten minutes.

Flip and Finish

  • Turn the cake onto a serving plate. Pour the rest of the glaze over it. Let it cool completely before serving.

Notes

  • Use high-quality dark rum for better flavor.
  • Grease the pan corners with extra butter.
  • Do not over-bake the cake or it dries.
  • Let the glaze soak in very slowly.
  • Use fresh pecans for a nice crunch.
