Ingredients
  

  • 6 cups of frozen whole kernel corn.
  • 1/2 cup of creamy mayonnaise.
  • 1/2 cup of sour cream.
  • 1 cup of crumbled Cotija cheese.

  • 1/2 teaspoon of smoked paprika.
  • 2 cloves of minced garlic.
  • 1/4 cup of fresh chopped cilantro.
  • 1 tablespoon of fresh lime juice.
  • 1/2 teaspoon of salt.
  • 1/4 teaspoon of black pepper.
  • 2 tablespoons of melted butter.

Instructions
 

Preheat Your Oven

  • Set your oven to 350 degrees Fahrenheit. Let it get nice and hot. Grease your baking dish with butter.

Prepare the Corn

  • Thaw your frozen corn completely. Drain any extra water away. Pat the corn dry with towels. This keeps the casserole from being watery.

Mix the Creamy Sauce

  • Grab your large mixing bowl. Add mayonnaise and sour cream together. Stir until the mixture is very smooth. Add the garlic and lime juice now.

Season the Mixture
