1

of fresh lime juice.
1/2
teaspoon
of salt.
1/4
teaspoon
of black pepper.
2
tablespoons
of melted butter.
Instructions
Preheat Your Oven
Set your oven to 350 degrees Fahrenheit. Let it get nice and hot. Grease your baking dish with butter.
Prepare the Corn
Thaw your frozen corn completely. Drain any extra water away. Pat the corn dry with towels. This keeps the casserole from being watery.
Mix the Creamy Sauce
Grab your large mixing bowl. Add mayonnaise and sour cream together. Stir until the mixture is very smooth. Add the garlic and lime juice now.
Season the Mixture
Add chili powder and smoked paprika. Sprinkle in the salt and pepper. Stir well to mix the spices. It should look colorful and smell great.
Combine Corn and Cheese
Add the corn to the bowl. Mix it into the creamy sauce. Fold in half of the Cotija cheese. Save the rest of the cheese for later.
Transfer to Dish
Pour the mixture into your baking dish. Spread it out with your spatula. Make the top nice and even.
Bake the Casserole
Put the dish in the oven. Bake for about 30 minutes. The edges should look bubbly and golden.
Add Final Toppings
Take the dish out safely. Sprinkle the remaining Cotija cheese on top. Add the fresh chopped cilantro now.
Serve and Enjoy
Let it cool for five minutes. Serve it while it is still warm. It goes great with grilled chicken.
Notes
Use fresh lime juice for best flavor.
Do not overcook the corn kernels.
Add extra chili powder for more heat.
Make sure to drain the corn well.
Use full-fat sour cream for richness.
Top with crushed chips for extra crunch.
Try adding chopped jalapenos for spice.
Fresh corn off the cob works great too.
