Ingredients

  • 1 sheet of frozen puff pastry.
  • 1 pound of breakfast sausage meat.
  • 1/2 cup of fine breadcrumbs.
  • 1 large egg for the wash.
  • 1 tablespoon of cold water.
  • 1 teaspoon of dried thyme.
  • 1/2 teaspoon of onion powder.
  • 1/2 teaspoon of black pepper.
  • 1/4 cup of flour for dusting.

Instructions

Thaw the Pastry

  • Take the puff pastry out of the freezer. Let it sit for twenty minutes. It should be soft but still cold. Do not let it get too warm.

Prep the Meat

  • Put the sausage meat in a bowl. Add the breadcrumbs and the dried spices. Mix everything with your clean hands. This makes the filling very tasty.

Roll the Dough

  • Lightly flour your clean kitchen counter. Unfold the puff pastry sheet carefully. Use a rolling pin to smooth it. Cut the sheet into three long strips.

Shape the Sausage

  • Divide the meat into three equal parts. Roll each part into a long log. Place one log down each pastry strip. Keep the meat in the center.

Add the Egg Wash

  • Whisk the egg and water in a bowl. Brush the edges of the pastry strips. This helps the dough stick together well.

Roll Them Up

  • Fold the pastry over the meat logs. Press the edges down with a fork. This creates a pretty sealed edge. Make sure they are tight.

Cut into Minis

  • Use a sharp knife to cut rolls. Each piece should be two inches long. Place them on your lined baking sheet. Space them out an inch apart.

Bake Until Golden

  • Brush the tops with more egg wash. Bake at 400°F (200°C) for 20 minutes. They should be puffed and very golden. Serve them warm with mustard.

Notes

  • Keep the puff pastry cold for flakes.
  • Do not overwork the sausage meat mixture.
  • Use a pizza cutter for straight lines.
  • Prick the tops with a small fork.
  • This lets steam escape while they bake.
  • Sprinkle sesame seeds on top for crunch.
  • Use spicy sausage for more bold flavor.
  • Let them cool for five minutes first.
  • This keeps the bottoms from being soggy.
  • Serve with honey mustard or spicy ketchup.
