Ingredients
  

  • 24 oz sliced Cremini mushrooms.
  • 2 tbsp olive oil.
  • 1 tbsp salted butter.
  • 1 tsp chili powder.
  • 1/2 tsp ground cumin.
  • 12 small corn tortillas.
  • 1/2 cup crumbled cotija cheese.
  • 1/4 cup chopped fresh cilantro.
  • 2 limes cut into wedges.
  • 1/2 cup diced white onion.

Instructions
 

  • Clean the mushrooms with a damp paper towel. Slice them into thick, even pieces.
  • Heat oil and butter in the large skillet. Add mushrooms and cook until they turn golden.
  • Sprinkle in the chili powder and cumin. Stir well so every mushroom is coated perfectly.
  • Heat your corn tortillas on a hot griddle. They should be soft and slightly charred.
  • Place mushrooms in the center of each tortilla. Top with onions, cheese, and fresh cilantro.
  • Squeeze fresh lime juice over the top. Serve them while they are still very hot.
