Boil water in your large pot.
Add a pinch of salt to water.
Cook egg noodles according to package directions.
Drain noodles when they're tender.
Set them aside in a bowl.
Heat a large pan over medium heat.
Add ground beef and chopped onion together.
Cook until beef turns brown completely.
Add minced garlic and cook one minute.
Drain any extra fat from the pan.
Take a large mixing bowl now.
Add cream of mushroom soup inside.
Mix in sour cream and cottage cheese.
Stir everything until it's smooth and creamy.
Add Italian seasoning, salt, and pepper.
Mix well again.
Add cooked noodles to the meat mixture.
Pour the creamy sauce over everything.
Stir gently until everything is coated well.
Make sure the sauce covers all noodles.
Grease your 9x13 inch baking dish.
Pour the noodle mixture into the dish.
Spread it out evenly across the pan.
Sprinkle cheddar cheese on top generously.
Preheat your oven to 350°F (175°C).
Cover the dish with aluminum foil.
Bake for 25 minutes covered first.
Remove foil and bake 10 more minutes.
The cheese should be bubbly and golden.
Let it cool for 5 minutes.
