Ingredients
  

  • 1 cup unsalted butter softened.
  • 1 cup firmly packed brown sugar.
  • 1/2 cup granulated white sugar.
  • 2 large eggs room temperature.
  • 1 teaspoon pure vanilla extract.
  • 1 1/2 cups all-purpose flour.
  • 1 teaspoon ground cinnamon.
  • 1 teaspoon baking soda.
  • 1/2 teaspoon table salt.
  • 3 cups old-fashioned oats.
  • 1 cup raisins or chocolate chips.

Instructions
 

Cream the Sugars

  • Put the softened butter and both sugars in a bowl. Beat them together until the mixture is very light. This makes the cookies light and airy.

Add the Eggs

  • Mix in the eggs one at a time. Pour in the vanilla extract and beat again. The batter should look very creamy and pale yellow.

Sift Dry Ingredients

  • Whisk the flour, cinnamon, and baking soda together. Add the salt to the dry flour mixture. Stir them so the spices are spread out.

Combine the Batter

  • Slowly pour the dry ingredients into the wet batter. Mix on a low speed until just combined. Do not overmix the dough at this stage.

Stir in the Oats

  • Add the old-fashioned oats to the thick dough. Stir them in by hand with a wooden spoon. This keeps the oats whole and very chewy.

Add Your Mix-ins

  • Fold in the raisins or the chocolate chips now. Make sure they are spread evenly through the dough. Every cookie should have plenty of treats.

Scoop the Dough

  • Drop rounded tablespoons of dough onto your baking sheet. Space them two inches apart so they can spread. This prevents them from sticking together.

Bake Until Brown

  • Put the sheets in a 350°F oven. Bake for about 10 to 12 minutes. The edges should be a light golden brown.
