Ingredients
  

  • 4 large Russet potatoes sliced thin.
  • 3 tablespoons olive oil.
  • 1 teaspoon sea salt.
  • 2 cups shredded cheddar cheese.
  • 1/2 cup cooked bacon bits.
  • 1/4 cup sliced jalapeños.
  • 1/2 cup sour cream.
  • 2 green onions chopped.

Instructions
 

  • Preheat your oven to 400°F. Slice the potatoes into thin rounds.
  • Put potatoes in a bowl with oil. Toss them well with salt and pepper.
  • Lay slices flat on a baking sheet. Bake for 20 minutes until they turn golden.
  • Pile the potatoes close together. Sprinkle plenty of cheese and bacon on top.
  • Put the tray back in the oven. Bake for 5 minutes until the cheese bubbles.
  • Add sour cream and onions on top. Serve them hot while the cheese is stretchy.

Notes

  • Slice the potatoes evenly for even cooking.
  • Use a mandoline for very thin, crispy slices.
