  • 1 Cup Prunes Pitted
  • 1 Cup Water For Boiling
  • 2 Cups All-purpose Flour
  • 1 Tsp Baking Soda
  • 1 Tsp Cinnamon
  • 1 Tsp Nutmeg
  • 1 Cup Vegetable Oil
  • 1.5 Cups Granulated Sugar
  • 3 Large Eggs
  • 1 Cup Buttermilk
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Butter For Glaze
  • 1/2 Cup Buttermilk For Glaze
  • 1 Cup Granulated Sugar For Glaze

Instructions
 

  • Place your prunes in the small pot carefully. Boil them in water until they are very tender. Drain and mash them well before cooling.
  • Turn the stove to preheat the oven to 350°F. Grease your Bundt pan with butter or spray. Dust it with flour to prevent sticking.
  • Combine your sugar and vegetable oil in a bowl. Add eggs one at a time while mixing. Beat until the mixture is light and creamy.
  • Whisk the flour, cinnamon, nutmeg, and soda together. Add dry items to the wet bowl slowly. Stir in the buttermilk and vanilla extract.
  • Fold in the mashed prunes with a spoon. Pour the batter into your prepared Bundt pan. Bake for about 45 to 50 minutes.
  • Combine glaze ingredients in a saucepan while baking. Bring to a boil for one minute. Pour it over the hot cake immediately.
