Ingredients

  • One 5 to 7 pound pork butt.
  • Two large yellow onions peeled and halved.
  • One 11-ounce can of chipotle peppers in adobo.
  • Two cups of brown sugar.
  • One cup of beef broth.
  • Two teaspoons of salt.
  • Two teaspoons of black pepper.

Instructions

Prep the Oven and Meat

  • Preheat your oven to 300°F. Rub salt and pepper on the pork.

Prepare the Base

  • Place onion halves in the Dutch oven. Set the pork on top of them.

Add the Flavor

  • Pour the chipotle peppers over the pork. Sprinkle the brown sugar on top.

Add Liquid

  • Pour the beef broth into the pot. Do not wash off the sugar.

Slow Cook

  • Cover the pot with a tight lid. Cook in the oven for six hours.

Check for Tenderness

  • The meat should fall apart with a fork. Cook longer if it feels tough.

Shred and Serve

  • Remove the fat from the top. Shred the meat into the juices.

Notes

  • Use a pork butt for the best fat.
  • Do not skip the brown sugar.
  • Cook it low and slow for many hours.
  • Let the meat rest before you shred it.
  • Serve it on toasted brioche buns.
