Ingredients
  

  • 4 cups dried elbow macaroni.
  • 1/2 cup real mayonnaise.
  • 1/2 cup whole milk.
  • 2 tablespoons sugar.
  • 2 tablespoons white vinegar.
  • 1 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • 1/2 cup diced red onion.
  • 1/2 cup diced celery.
  • 1/2 cup diced green bell pepper.
  • 1/4 cup chopped fresh parsley.
  • 1/2 cup sliced black olives.

Instructions
 

Boil the Macaroni

  • Cook the pasta in salted water. Follow the package directions carefully. Do not overcook the noodles. They should be firm but soft.

Drain and Cool

  • Pour the pasta into a colander. Rinse it with very cold water. This stops the cooking process. Let all the water drain out.

Make the Dressing

  • Get a small mixing bowl. Add mayo, milk, sugar, and vinegar. Whisk until the sauce is smooth. Add salt and pepper now.

Prep the Vegetables

  • Wash all your fresh vegetables. Chop the onion and celery finely. Dice the green bell pepper small. Chop the fresh parsley well.

Mix Everything Together

  • Put the cold pasta in a bowl. Add the chopped vegetables and olives. Pour the creamy dressing over it. Toss gently with a big spoon.

Chill the Salad

  • Cover the bowl with plastic wrap. Put it in the fridge. Let it sit for two hours. This blends all the flavors together.

Notes

  • Cool the pasta completely. Never add dressing to hot noodles. It will make the salad greasy.
  • Salt the pasta water. This adds flavor to the macaroni. It makes a big difference.
  • Use real mayonnaise. Do not use salad dressing spreads. Real mayo gives the best texture.
  • Chop veggies very small. This ensures flavor in every bite. It looks much better too.
  • Add milk slowly. If the salad looks dry, add milk. It keeps the dressing very creamy.
