Ingredients

  • 2 cups crushed pretzels.
  • 3/4 cup melted butter.
  • 3 tablespoons white sugar.
  • 8 ounces softened cream cheese.
  • 1 cup white sugar for filling.
  • 8 ounces whipped topping like Cool Whip.
  • 6 ounces raspberry gelatin powder.
  • 2 cups boiling water.
  • 2 cups frozen raspberries.

Instructions

Make the Pretzel Crust

  • Preheat your oven to 350 degrees. Mix crushed pretzels, sugar, and melted butter. Press this mix into your baking dish.

Bake the Base

  • Bake the crust for 10 minutes. This makes it stay crunchy. Let it cool down completely. Do not skip the cooling step.

Cream the Filling

  • Beat cream cheese and sugar together. Use an electric mixer for a smooth texture. Fold in the whipped topping gently.

Spread the Cream Layer

  • Spread the mixture over the cool crust. Seal the edges of the pan well. This keeps the Jello from leaking down.

Prepare the Raspberry Jello

  • Mix boiling water and gelatin powder. Stir until the powder dissolves fully. Add the frozen raspberries to the liquid.

Let the Jello Thicken

  • Wait until the Jello thickens slightly. It should feel like cold syrup. This takes about 10 to 15 minutes.

Add the Final Layer

  • Pour the raspberry mix over the cream. Spread it out evenly with a spoon. It will look bright and red.

Chill and Set

  • Put the dish in the fridge. Let it sit for four hours. Overnight is even better for clean slices.

Notes

  • Seal the edges. Spread cream cheese to the very side. This stops the pretzel crust from getting soggy.
  • Cool the crust. Never add cream to a hot crust. It will melt and become a mess.
  • Use frozen berries. Frozen raspberries help the Jello set faster. They also keep the fruit firm.
  • Crush pretzels well. Do not turn them into dust. Small chunks give a better salty crunch.
  • Soft cream cheese. Ensure the cheese is at room temperature. This prevents lumps in your smooth filling.
