Ingredients
  

  • 1 pound of ground Italian sausage.
  • 1 package 16 ounces of potato gnocchi.
  • 2 tablespoons of unsalted butter.
  • 1 small diced yellow onion.
  • 3 cloves of minced fresh garlic.
  • 1 cup of heavy whipping cream.
  • 1/2 cup of chicken broth.
  • 1 cup of fresh baby spinach.
  • 1/2 cup of grated Parmesan cheese.
  • 1/2 teaspoon of dried oregano.
  • Salt and pepper to taste.

Instructions
 

Brown the Sausage

  • Place your skillet over medium-high heat. Add the ground sausage to the pan. Break it up with your wooden spoon. Cook until it is no longer pink.

Sauté the Aromatics

  • Add the butter to the same skillet. Stir in the onions and the garlic. Cook them until they are very soft. This adds a sweet flavor base.

Add the Gnocchi

  • Add the dry gnocchi to the skillet. You do not need to boil them first. Stir them with the sausage and onions. Let them lightly brown for two minutes.

Pour the Liquids

  • Slowly pour in the chicken broth first. Then add the rich heavy cream. Stir everything together until it starts bubbling. Lower the heat to a simmer.

Simmer and Soften

  • Cover the pan with a tight lid. Let the gnocchi cook for five minutes. They will soak up the creamy sauce. They should become very soft and tender.

Season the Sauce

  • Stir in the salt and pepper. Add the dried oregano for extra flavor. Make sure the sauce is thick and smooth.

Wilt the Spinach

  • Add the fresh baby spinach leaves. Stir them until they turn bright green. This only takes about one minute. It adds a nice pop of color.

Finish with Cheese

  • Turn off the heat on the stove. Sprinkle the Parmesan cheese over the top. Let it melt into the creamy sauce. Serve it hot in large bowls.

Notes

  • Use spicy sausage for a little kick.
  • Do not boil the gnocchi in water first.
  • Cooking them in the sauce adds flavor.
  • Use freshly grated cheese for better melting.
  • Add a splash of broth if thick.
