Ingredients
  

  • 3 pounds of sirloin tip beef roast.
  • 2 tablespoons of olive oil for searing.
  • 1 large yellow onion sliced into rings.
  • 3 cloves of fresh garlic minced fine.
  • 2 cups of low-sodium beef broth.
  • 1 tablespoon of Worcestershire sauce.
  • 1 teaspoon of dried rosemary leaves.
  • 1 teaspoon of dried thyme.
  • Salt and black pepper to taste.
  • 4 large carrots peeled and chopped.
  • 1 pound of small red potatoes halved.

Instructions
 

Season the Beef

  • Pat the meat dry with paper towels first. Sprinkle salt and pepper on all sides. Make sure the seasoning sticks to the meat. This builds a great base for the flavor.

Sear the Meat

  • Heat oil in a large skillet over high. Place the roast in the hot pan carefully. Brown every side until a crust forms. This step locks in all the tasty juices.

Prepare the Crock Pot

  • Place the sliced onions at the very bottom. Put the seared beef on top of onions. Add the carrots and potatoes around the meat. This keeps the meat off the direct heat.

Mix the Liquids

Notes

  • Use fresh garlic for the best aromatic smell. Powder works but fresh is much better here.

  • Let the meat rest for ten minutes before slicing. This keeps the juices inside the beef roast.
