Ingredients

  • 1 pound of dried rotini or penne pasta.
  • 2 pounds of lean ground beef.
  • 1 medium yellow onion finely diced.
  • 1 green bell pepper finely diced.
  • 3 cloves of garlic minced.
  • 2 cups of ketchup.
  • 1/2 cup of water.
  • 2 tablespoons of brown sugar.
  • 1 tablespoon of chili powder.
  • 2 cups of shredded cheddar cheese.
  • 1/2 teaspoon of kosher salt.

Instructions

Cook the Pasta

  • Fill a large pot with water and salt. Bring the water to a fast rolling boil. Cook the pasta for two minutes less than usual.

Brown the Beef

  • Heat your large skillet over medium-high heat. Add the ground beef and cook until brown. Use a spoon to break it into bits.

Add the Veggies

  • Stir in the diced onion and green pepper. Cook them with the meat until they are soft. This usually takes about five minutes total.

Drain the Fat

  • Carefully tilt the pan to remove extra grease. This keeps the casserole from being too oily later. Return the pan to the stove.

Make the Sauce

  • Add the garlic, ketchup, water, and brown sugar. Stir in the chili powder and the salt. Let the sauce simmer for ten minutes.

Mix the Casserole

  • Drain the pasta and put it in the dish. Pour the sloppy joe meat over the pasta. Toss them together until every noodle is red.

Add the Cheese

  • Sprinkle the shredded cheddar cheese over the top. Make sure to cover the entire surface of meat. This creates a gooey crust.

Bake the Dish

  • Preheat your oven to 350 degrees Fahrenheit. Put the dish in for 20 minutes total. The cheese should be bubbly and melted.

Notes

  • Undercook the pasta: It finishes cooking in the oven later.
  • Lean beef: Use 90% lean meat to avoid excess grease.
  • Fresh garlic: It adds a much better punch of flavor.
  • Sharp cheddar: Use sharp cheese for a stronger cheese taste.
  • Small dice: Cut the peppers small so kids eat them.
  • Add heat: Add a dash of hot sauce for spice.
  • Grease the dish: Use cooking spray so nothing sticks firmly.
  • Let it rest: Wait five minutes before serving the dish.
