Ingredients

  • 8 skinless bone-in chicken thighs.
  • 1/2 cup of honey.
  • 1/2 cup of low-sodium soy sauce.
  • 1/4 cup of ketchup.
  • 2 cloves of garlic minced.
  • 1/2 teaspoon of dried oregano.
  • 1/4 teaspoon of red pepper flakes.
  • 1/2 teaspoon of kosher salt.
  • 1/2 teaspoon of black pepper.

Instructions

Season the chicken

  • Sprinkle salt and pepper on both sides of thighs. This helps the base flavor of the meat.

Place in the pot

  • Lay the chicken thighs in the bottom of the pot. Do not pile them too high if possible.

Make the sauce

  • Mix the honey, soy sauce, and ketchup in a bowl. Whisk them together until the sauce is very smooth.

Add the spices

  • Stir the garlic, oregano, and red pepper flakes in. These add a nice kick to the sweet sauce.

Pour it over

  • Pour all the sauce over the chicken thighs. Make sure every piece of meat is covered well.

Start the cook

  • Put the lid on the slow cooker tightly. Set it to low heat for 6 hours.

Check for tenderness

  • The meat should pull away from the bone easily. Use a fork to test if it is done.

Thicken the sauce

  • Remove the chicken and keep it warm on a plate. Boil the leftover liquid in a pan to thicken.

Glaze and serve

  • Pour the thick sauce back over the chicken thighs. Serve it over hot rice or some mashed potatoes.

Notes

  • Trim the fat: Cut off any big pieces of extra fat. This keeps the sauce from getting too oily later.
  • Add fresh ginger: Grate a little ginger into the sauce. It adds a very bright and fresh zingy taste.
  • Serve with rice: The sauce is very good on white rice. It soaks up all the honey and soy flavor.
  • Use bone-in thighs: The bone adds more flavor to the sauce. It also keeps the meat very moist and tender.
  • Brown them first: You can sear the skin in a pan. This adds a nice color and deeper savory flavor.
  • Keep the lid shut: Do not open the pot while it cooks. It lets out the steam needed for soft meat.
