Ingredients

  • 1 cup of unsalted butter softened.
  • 1/2 cup of fresh strawberries finely minced.
  • 1/4 cup of powdered sugar.
  • 1/2 teaspoon of vanilla extract.
  • 1 pinch of kosher salt.

Instructions

Soften the Butter

  • Leave the butter on the counter for one hour. It must be very soft to mix.

Prep the Berries

  • Wash and dry the strawberries very well. Chop them into very tiny little pieces.

Whip the Butter

  • Put the butter in the mixing bowl. Beat it until it looks very fluffy.

Add the Sugar

  • Pour the powdered sugar into the bowl slowly. Mix it on a low speed first.

Add the Flavor

  • Stir in the vanilla extract and salt. This makes the flavor much deeper.

Fold in Fruit

  • Add the tiny strawberry pieces to the bowl. Use a spatula to fold them in.

Mix the Color

  • Keep stirring until the butter turns a light pink. The juice will color the butter.

Chill and Serve

  • Put the butter in a small jar. Keep it in the fridge until you eat.

Notes

  • Use real butter. Margarine will not taste as rich or creamy.
  • Dry the berries. Extra water can make the butter separate.
  • Mince very finely. You want tiny bits of fruit in every bite.
  • Use a mixer. This makes the butter light like a cloud.
  • Try honey. You can use honey instead of sugar for sweetness.
  • Serve at room temp. Let it soften before spreading on toast.
