Ingredients

  • 32 ounces frozen tater tots one bag.
  • 1 pound ground breakfast sausage or bacon.
  • 2 cups shredded sharp cheddar cheese.
  • 8 large fresh eggs.
  • 2 cups whole milk or heavy cream.
  • 1 teaspoon fine sea salt.
  • 1/2 teaspoon black pepper powder.
  • 1/2 teaspoon onion powder for extra flavor.
  • 1/2 teaspoon garlic powder for savory taste.
  • Fresh parsley for a pretty garnish.

Instructions

  • Prep the Oven and Pan
  • First, preheat your oven to 375 degrees. Grease your baking dish with butter or oil. This prevents the eggs from sticking badly.
  • Cook the Breakfast Meat
  • Place the sausage in a large frying pan. Cook it over medium heat until brown. Break it into small crumbles as it cooks. Drain the extra grease into a jar.
  • Layer the Tater Tots
  • Open the bag of frozen tater tots. Pour them into the bottom of the dish. Spread them out in a very even layer.
  • Add the Cooked Meat
  • Sprinkle the warm sausage over the potato layer. Make sure the meat covers all the tots. This adds flavor to every single bite.
  • Add the Shredded Cheese
  • Take your shredded cheddar cheese. Spread it generously over the meat and potatoes. Use more cheese if you like it gooey.
  • Mix the Egg Liquid
  • Crack eight eggs into your large bowl. Add the milk and all your dry spices. Whisk everything until the yellow yolks disappear.
  • Pour the Egg Mixture
  • Slowly pour the eggs over the entire dish. Use a spoon to help it settle down. The liquid should reach the very bottom.
  • Bake the Casserole
  • Put the dish in the hot oven. Bake it for 45 to 50 minutes. The center should not wiggle when moved.
  • Cool and Serve
  • Remove the dish from the oven carefully. Let it sit for ten minutes to firm. Top with fresh parsley and serve it hot.

Notes

  • Use sharp cheddar cheese for a stronger flavor.
  • Always drain the meat grease to avoid sogginess.
  • Whisk the eggs very well for a fluffy texture.
  • Brown the tots slightly before adding eggs for crunch.
  • Add chopped bell peppers for a pop of color.
  • Let the dish rest so it stays together nicely.
  • Spray the foil so the cheese does not stick.
  • Make it the night before to save morning time.
  • Use spicy sausage if you like a little heat.
