- 2 medium Onions (thinly sliced)
- 1/4 cup Vegetable oil
- 1/4 cup Red wine vinegar
- 8 Bell peppers (a mix of red, green, and yellow)
- 2 cloves Garlic (minced)
- 1/4 tsp Red pepper flakes, crushed (adjust to taste)
- 1/4 cup Sugar (granulated)
- 1/2 tsp Oregano (dried)
- Pepper to taste
- Salt to taste
The oven should be preheated to 400°F (200°C).
Slice and Wash bell peppers. Remove membranes and seeds.
In a large skillet, heat the oil. Onions and garlic should be sautéed until soft.
Cook bell peppers until soft.
Mix vinegar, sugar, oregano, pepper flakes, salt, and pepper.
Pour the mixture over the peppers and onions. Cook briefly.
Spread evenly in a baking dish.
Until tender, bake for 30-35 minutes in the oven.
Let it cool slightly before serving.
