Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup desiccated coconut
  • 1 cup dried pineapple chopped
  • 1 cup white chocolate chips

Instructions
 

  • Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit) and line a baking sheet with parchment paper.
  • Cream together the butter and both sugars until creamy.
  • Add eggs and vanilla and mix well.
  • In a separate bowl, mix flour, baking soda, and salt.
  • Gradually add dry ingredients to wet mixture and mix well.
  • Add coconut, dried pineapple, and white chocolate chips and gently fold in.
  • Drop small scoops of dough onto baking sheets, spacing them slightly apart.
  • Bake for 10-12 minutes or until cookies are golden brown.
  • Place cookies on a wire rack to cool.

Notes

  • Soften the butter to room temperature, do not use melted butter.
  • Refrigerating the dough for 15-20 minutes before baking will help to achieve a nice consistency.
  • Do not overfill the baking sheet; leave a little space between each cookie.
