- 1 cup butter softened
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2.5 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup desiccated coconut
- 1 cup dried pineapple chopped
- 1 cup white chocolate chips
Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit) and line a baking sheet with parchment paper.
Cream together the butter and both sugars until creamy.
Add eggs and vanilla and mix well.
In a separate bowl, mix flour, baking soda, and salt.
Gradually add dry ingredients to wet mixture and mix well.
Add coconut, dried pineapple, and white chocolate chips and gently fold in.
Drop small scoops of dough onto baking sheets, spacing them slightly apart.
Bake for 10-12 minutes or until cookies are golden brown.
Place cookies on a wire rack to cool.
- Soften the butter to room temperature, do not use melted butter.
- Refrigerating the dough for 15-20 minutes before baking will help to achieve a nice consistency.
- Do not overfill the baking sheet; leave a little space between each cookie.
