Ingredients

  • For the Dough
  • 3 ½ cups all-purpose flour.
  • ¼ cup unsweetened cocoa powder.
  • 1 packet instant yeast.
  • ¼ cup granulated sugar.
  • 1 teaspoon salt.
  • 1 cup warm milk.
  • ¼ cup melted butter.
  • 1 large egg.
  • 2 teaspoons red food coloring.
  • For the Filling
  • ½ cup softened butter.
  • 1 cup brown sugar.
  • 2 tablespoons ground cinnamon.
  • For the Frosting
  • 4 ounces softened cream cheese.
  • ¼ cup softened butter.
  • 1 ½ cups powdered sugar.
  • 1 teaspoon vanilla extract.
  • 2 tablespoons milk.

Instructions

Mix the Dry Ingredients

  • Mix flour, cocoa, sugar, and yeast. Add the salt last. Stir them well in a big bowl.

Add the Wet Ingredients

  • Pour in warm milk and melted butter. Add the egg and red food coloring. Mix until a soft dough forms.

Knead the Dough

  • Knead the dough for five minutes. It should feel smooth and stretchy. Use a little flour if it sticks.

Let it Rise

  • Place dough in a greased bowl. Cover it with a warm towel. Let it rise for one hour. It should double in size.

Roll the Dough

  • Punch the dough down gently. Roll it into a large rectangle. Aim for about 12x18 inches.

Add Filling

  • Spread soft butter over the dough. Sprinkle brown sugar and cinnamon on top. Press it down slightly.

Roll and Cut

  • Roll the dough up tightly. Start from the long edge. Cut into 12 even rolls. Use floss for clean cuts.

Second Rise

  • Place rolls in a greased pan. Cover and let rise for 30 minutes. They will look puffy.

Bake the Rolls

  • Preheat your oven to 350°F. Bake for 20 to 25 minutes. Do not overbake them.

Frost and Serve

  • Whisk frosting ingredients until smooth. Spread over warm rolls. Serve them while they are fresh.

Notes

  • Use gel food coloring for bright red.
  • Liquid coloring can make dough too wet.
  • Ensure your milk is not too hot.
  • Hot milk kills the yeast.
  • Use dental floss to cut the rolls.
  • It prevents squishing the dough layers.
  • Soften your cream cheese for the frosting.
  • This makes it smooth and lump-free.
  • Bake them until just set.
  • This keeps the center very soft.
