Ingredients

  • 3 cups SWEET POTATOES
  • 1 cup GRANULATED SUGAR
  • 1/2 tsp SALT
  • 1 tsp VANILLA EXTRACT
  • 2 large EGGS
  • 1/2 cup MELTED BUTTER
  • 1 cup LIGHT BROWN SUGAR
  • 1/3 cup ALL-PURPOSE FLOUR
  • 1 cup CHOPPED PECANS
  • 1/3 cup MELTED BUTTER FOR TOPPING

Instructions

Step 1:

  • Peel your fresh sweet potatoes with a knife. Cut them into large, even chunks now. This helps them cook at the same time.

Step 2:

  • Place the potato chunks in a large pot. Cover them with plenty of cold water. Add a pinch of salt to the water.

Step 3:

  • Turn the stove to high heat now. Bring the water to a rolling boil. Cook until the potatoes are very tender.

Step 4:

  • Drain the hot water from the pot. Place the soft potatoes in a large bowl. Let them cool for a few minutes.

Step 5:

  • Use an electric mixer on the potatoes. Blend them until they are very smooth. There should be no large lumps left.

Step 6:

  • Add the sugar and melted butter now. Pour in the vanilla and the eggs. Mix everything on a medium speed.

Step 7:

  • Preheat your oven to 350 degrees. Grease your baking dish with some butter. This stops the potatoes from sticking.

Step 8:

  • Spread the potato mixture into the dish. Use a spatula to make it flat. Ensure the corners are filled in well.

Step 9:

  • Mix the brown sugar and flour together. Use a medium bowl for this step. Add the melted butter and pecans.

Step 10:

  • Stir the topping until it looks crumbly. Spread it evenly over the potatoes. Cover the entire surface with the nuts.

Step 11:

  • Place the dish in the hot oven. Bake it for thirty minutes total. The top should look golden and bubbly.

Notes

  • Use fresh sweet potatoes for the best texture.
  • Do not overmix the eggs into the batter.
  • Let the casserole sit before you serve it.
  • You can use canned potatoes to save time.
  • Make sure the butter is not too hot.
  • Chop the pecans into very small pieces.
  • Double the topping if you love extra crunch.
  • Store the nuts in a cool, dry place.
