Ingredients
  

  • 12 oz pasta penne or fettuccine
  • 1 lb fresh salmon fillet
  • 4 cups fresh spinach
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup parmesan cheese

Instructions
 

  • Boil water in large pot.
  • Add pasta and cook until tender.
  • Heat olive oil in skillet.
  • Season salmon with salt and pepper.
  • Cook salmon for 4 minutes each side.
  • Remove salmon and flake into pieces.
  • Add garlic to same skillet.
  • Pour in white wine and cream.
  • Add spinach and cook until wilted.
  • Return flaked salmon to pan.
  • Drain pasta and add to sauce.
  • Toss everything together gently.
  • Sprinkle with parmesan cheese before serving.

Notes

  1. Use fresh salmon for best flavor and texture
  2. Don't overcook the salmon to keep it tender
  3. Add spinach gradually to prevent overcrowding the pan
  4. Reserve some pasta water for thinning sauce
