Ingredients
  

  • 1 cup All-purpose flour
  • 2 cups  Cornstarch
  • 1 cup Butter unsalted (softened)
  • 1 cup Sugar powdered
  • 1/4 cup  Coconut grated (for topping)
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking powder
  • 1 Pinch  Salt

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet.
  • Sift cornstarch, flour, and baking powder. Add a pinch of salt.
  • Cream softened butter and powdered sugar until fluffy.
  • Add vanilla extract and mix well.
  • Gradually combine dry and wet ingredients until soft dough forms.
  • Roll dough into small balls on the baking sheet.
  • Gently press with a fork to create a pattern.
  • Optional: Sprinkle grated coconut for extra flavour.
  • Bake for 10-12 minutes until the edges are golden.
  • Cool on the sheet, then transfer to a wire rack. Enjoy!

Notes

  • Use Soft Butter: Make sure your butter is soft but not melted for the perfect texture.
  • Don't Mix Too Much: Mix just until combined to keep the cookies tender.
