- 4 large Russet Potatoes
- 1/2 lb Shrimp
- 1/2 lb Crab Meat
- 4 tbsp Butter
- 1/4 cup Heavy Cream
- 1 cup Cheddar Cheese
- 1 tsp Old Bay Seasoning
- 2 cloves Garlic
- 2 tbsp Green Onions
- 1 cup Brussel Sprouts for the side
- 1/2 tsp Salt
- 1/4 tsp Pepper
Bake the Potatoes: Wash the potatoes and poke holes. Bake them until they are soft inside.
Scoop the Flesh: Cut the potatoes in half. Scoop out the middle into a bowl.
Sauté the Seafood: Cook shrimp and crab in butter. Season them with the Old Bay.
Make the Filling: Mix potato flesh with cream and butter. Stir in the cooked seafood gently.
Restuff the Skins: Spoon the mix back into the skins. Pile it up high and neat.
Top with Cheese: Sprinkle lots of cheese on each one. Put them back in the oven.
