- 2 Eggs (beaten)
- 2 tablespoons Ginger + garlic
- 4 Green onions spring onions
- 2 tablespoons Chili sauce (optional)
- 8.60 ounces Boneless chicken
- 2 tablespoons Soy sauce
- 3.52 ounces Lo mein noodles
- 2 tablespoons Creole seasoning
- 6 cups Water
First, chop green onions finely and put them in a bowl. Peel and devein shrimp, then rinse quickly and pat dry.
Beat an egg in a cup to mix the yolk and whites.
In a big pot, heat oil over medium-high flame. Once hot, add shrimp and stir-fry for 1-2 minutes until pink.
Toss in ginger and garlic, and stir for 30 seconds until fragrant. Sprinkle Creole seasoning, and cook for one more minute.
Pour water and concentrated stock mix into the pot. Bring to a boil, then simmer on low for 5 minutes.
Add Lo Mein noodles, and cook until al dente (8-10 minutes).
Lastly, pour soy sauce, optional chilli sauce, and green onions into the soup. Stir well to evenly spread flavours.
