Ingredients

  • 1/2 cup softened unsalted butter.
  • 3/4 cup brown sugar.
  • 1/4 cup white granulated sugar.
  • 1 large egg at room temperature.
  • 1 teaspoon pure vanilla extract.
  • 1 tablespoon red food coloring gel.
  • 1 1/2 cups all-purpose flour.
  • 3 tablespoons unsweetened cocoa powder.
  • 1/2 teaspoon baking soda.
  • 1/4 teaspoon salt.
  • 1 cup white chocolate chips.

Instructions

Prep Your Kitchen

  • Preheat your oven to 350°F. Line your baking sheets with parchment paper. This stops the cookies from sticking.

Cream Butter and Sugars

  • Put butter and both sugars in a bowl. Mix them until the mixture is very fluffy. This takes about three minutes.

Add Wet Ingredients

  • Add the egg and vanilla to the bowl. Mix well. Now, add the red food coloring. Mix until the color is bright red.

Mix Dry Ingredients

  • In another bowl, whisk flour and cocoa powder. Add the baking soda and the salt. Stir them together gently.

Combine the Mixtures

  • Slowly add dry ingredients to the wet ones. Mix on low speed. Do not overmix the dough. Stop when the flour disappears.

Fold in Chips

  • Use a spatula for this part. Fold in the white chocolate chips. Make sure they are spread evenly.

Scoop the Dough

  • Use a scoop to make small balls. Place them on the baking sheet. Leave two inches between each ball.

Bake the Cookies

  • Bake for 9 to 11 minutes. The edges should look set. The centers will still look soft.

Cool and Enjoy

  • Let cookies sit on the pan for five minutes. Then, move them to a wire rack. Let them cool completely.

Notes

  • Pat the cherries dry with a paper towel.
  • This prevents the dough from getting too wet.
  • Use real butter for the best flavor.
  • Do not use margarine for these cookies.
  • Chill the dough for thirty minutes if it feels sticky.
  • This makes the cookies easier to roll.
  • Use a cookie scoop for even sizes.
  • Even cookies bake at the same time.
  • Don't skip the almond extract.
  • It makes the cherry flavor taste much better.
