Ingredients
  

For Potatoes:

  • 4 large potatoes
  • 2 tablespoons oil
  • 1 teaspoon salt

For Seafood Mix:

  • 1 pound shrimp cleaned
  • 8 oz crab meat
  • 4 tablespoons butter
  • 1 onion chopped
  • 2 celery sticks chopped
  • 3 garlic cloves minced
  • 1 bell pepper chopped
  • 2 tablespoons Creole seasoning
  • 1 cup heavy cream
  • ½ cup cheese shredded
  • 2 green onions chopped

Instructions
 

  • Heat oven to 425°F.
  • Wash and dry potatoes well.
  • Poke holes in potatoes with fork.
  • Rub oil and salt on potato skins.
  • Bake potatoes for 45-60 minutes.
  • Heat butter in large pan.
  • Cook onion, celery, and bell pepper.
  • Add garlic and cook 1 minute.
  • Add seasoned shrimp to pan.
  • Cook shrimp until pink.
  • Add crab meat gently.
  • Pour in cream and simmer.
  • Cut open baked potatoes.
  • Scoop out potato insides.
  • Mash potato with butter and cheese.
  • Fill potato shells with mashed potato.
  • Top with seafood mix.
  • Add green onions on top.
