For Potatoes:
- 4 large potatoes
- 2 tablespoons oil
- 1 teaspoon salt
For Seafood Mix:
- 1 pound shrimp cleaned
- 8 oz crab meat
- 4 tablespoons butter
- 1 onion chopped
- 2 celery sticks chopped
- 3 garlic cloves minced
- 1 bell pepper chopped
- 2 tablespoons Creole seasoning
- 1 cup heavy cream
- ½ cup cheese shredded
- 2 green onions chopped
Heat oven to 425°F.
Wash and dry potatoes well.
Poke holes in potatoes with fork.
Rub oil and salt on potato skins.
Bake potatoes for 45-60 minutes.
Heat butter in large pan.
Cook onion, celery, and bell pepper.
Add garlic and cook 1 minute.
Add seasoned shrimp to pan.
Cook shrimp until pink.
Add crab meat gently.
Pour in cream and simmer.
Cut open baked potatoes.
Scoop out potato insides.
Mash potato with butter and cheese.
Fill potato shells with mashed potato.
