Let the steak sit out for 20 minutes.
Put salt and pepper on both sides.
Heat a pan on medium-high.
Add olive oil and then butter.
Put the steaks in the pan.
Cook each side for 3 to 4 minutes.
Take the steaks out and let them rest.
Now make the sauce in the same pan.
Add butter and chopped garlic.
Cook until the garlic smells good.
Pour in bourbon carefully.
Let it boil for 2 minutes.
Add cream, salt, pepper, and paprika.
Stir until the sauce gets thick.
Cut the steak and pour the sauce over it.
Add parsley if you like.
