- 1 can Pineapple (drained and finely chopped) (20 ounces)
- Corn husks
- 2 lb Fresh corn masa dough
- 2 tbsp Water (warm)
- 1 cup Unsalted butter
- 1 cup Vegetable shortening
- 1 cup White sugar
- ½ tsp Baking soda
Soak corn husks in boiling water for 30-60 mins. Drain and set on a work surface, covering with a damp towel.
Combine masa dough, baking soda, and water. Knead until smooth. Add water gradually.
Beat butter, shortening, and sugar until creamy. Slowly add masa dough, kneading. Mix in chopped pineapple.
Spread 1 tbsp masa onto a corn husk. Fold into a tamale. Repeat.
Place the steamer in a saucepan with water. Bring to a boil, then simmer. Add tamales, and cook covered for 1 hour.
