Heat skillet over medium-high heat with 1.5 tbsp vegetable oil.
Add chicken strips, and season with salt and pepper.
Cook chicken for 8-10 minutes, no pink left.
Dice half the white onion while chicken.
Caramelize onion with chicken.
Let the chicken rest on a cutting board.
Cook rice per package instructions and season.
Heat refried beans over medium-low.
Cut chicken, and return to skillet.
Add taco seasoning, and 1/2 cup water, and simmer for 5-7 min.
Cube Velveeta cheese, mix with enchilada sauce, and heat until creamy.
Warm tortillas in the microwave (25 sec).
Place chicken, cheese sauce, rice, and beans on a tortilla.
Fold, and smother with green sauce.
Drizzle with sour cream.
