Ingredients
  

  • 1 ½ tablespoon Vegetable Oil
  • 1 ½ lb  Chicken Breast (Cut into strips)
  • Salt And Pepper (To Taste) 
  • 1 Small White Onion (Diced)
  • 1 Oz Taco Seasoning
  • ½ cup  Water
  • 2 cups  5-minute Instant White Rice
  • Cumin And Parsley Flakes (For Seasoning The Rice)
  • 16 oz  Taco Bell's Refried Beans
  • 8 oz  Velveeta Cheese
  • 10 oz  Green Chili Enchilada Sauce
  • ½ cup  Sour Cream
  • Large Flour Tortillas

Instructions
 

  • Heat skillet over medium-high heat with 1.5 tbsp vegetable oil.
  • Add chicken strips, and season with salt and pepper.
  • Cook chicken for 8-10 minutes, no pink left.
  • Dice half the white onion while chicken.
  • Caramelize onion with chicken.
  • Let the chicken rest on a cutting board.
  • Cook rice per package instructions and season.
  • Heat refried beans over medium-low.
  • Cut chicken, and return to skillet.
  • Add taco seasoning, and 1/2 cup water, and simmer for 5-7 min.
  • Cube Velveeta cheese, mix with enchilada sauce, and heat until creamy.
  • Warm tortillas in the microwave (25 sec).
  • Place chicken, cheese sauce, rice, and beans on a tortilla.
  • Fold, and smother with green sauce.
  • Drizzle with sour cream.
