Mix flour, baking powder, and salt together.
Add milk and melted butter slowly.
Stir until it forms a soft dough.
Don't overmix it.
Set the dough aside while cooking soup.
Heat a large pot over medium heat.
Add curry paste and cook for one minute.
Add ginger and garlic.
Stir for 30 seconds until fragrant.
Pour in coconut milk and vegetable broth.
Stir everything well.
Add mushrooms and bell pepper.
Bring soup to a gentle boil.
Then reduce heat to simmer.
Drop spoonfuls of dumpling dough into soup.
Make them small, about one tablespoon each.
Cover the pot with a lid.
Let dumplings cook for 12-15 minutes.
Don't lift the lid while cooking!
Add soy sauce and lime juice.
Taste and adjust seasoning if needed.
Garnish with fresh cilantro. Serve hot in bowls.
