- 1 1/4 pounds Chicken breast (skinless and boneless)
- 2 Pie crusts (9-inch)
- 3/4 Dry white wine
- 1 cup Carrots (peeled and sliced)
- 1 cup Frozen peas
- 1 cup Frozen corn kernels
- 1/2 Medium onion (small dice)
- 1 1/4 cups Chicken stock
- 1/2 cup Whole milk
- 2 tablespoon Unsalted butter
- 1 tablespoon Cream
- 1 teaspoon Thyme leaves (fresh)
Heat oven to 400°F. Boil carrots in 1 cup water; set aside.
Melt butter in a skillet. Cook chicken until browned.
Add onion; cook until clear. Stir in flour; cook briefly.
Pour in stock, wine, milk, and cream; season.
Add peas, corn, carrots; simmer for 10-15 minutes.
Mix in thyme leaves. Fill the pie pan with the mixture.
Cover with a second pie crust; seal edges.
Mix egg yolk with water; brush on the crust.
Make two slits on top. Sprinkle it with salt (optional).
Bake until golden, about 30 minutes.
Cool for 15 minutes before serving.
