- 2 Cups All-purpose Flour
- 1/2 Cup Cocoa Powder
- 1 Cup Sugar
- 1 Tsp Baking Soda
- 1 Cup Plant Milk
- 1 Tbsp Apple Cider Vinegar
- 1/2 Cup Vegan Butter
- 2 Cups Powdered Sugar
- 1 Tsp Vanilla Extract
Preheat your oven to 350 degrees Fahrenheit. Line your baking sheets with parchment paper. This prepares your workspace for baking.
Whisk the flour and cocoa in a bowl. Add the sugar and baking soda too. Mix them until the color is even.
Combine the plant milk and vinegar together. Let it sit for five minutes now. This creates a thick vegan buttermilk.
Pour the wet ingredients into the dry. Stir gently until the batter is smooth. Do not overmix the cake batter.
Scoop small rounds onto the baking sheet. Space them two inches apart from each. They will spread while they bake.
Bake the cakes for ten minutes total. They should spring back when touched gently. Let them cool on the pan first.
Beat the vegan butter and powdered sugar. Add vanilla and a splash of milk. Whip it until it looks very fluffy.
Spread filling on one flat cake side. Top it with another chocolate cake round. Press down gently to seal the pie.
- Use room temperature butter for the best cream. It mixes better.
- Sift your cocoa powder to remove all the lumps. It stays smooth.
- Do not overbake the cakes or they get dry. Watch the clock.
- Let the cakes cool completely before adding the filling. It prevents melting.
