Ingredients
  

  • 4 Boneless skinless chicken breasts
  • 1 cup All-purpose flour
  • Large eggs
  • 1 cup Breadcrumbs (plain or Italian-style)
  • 1 cup Grated Parmesan cheese
  • Salt and pepper (to taste)
  • 1/2 cup Vegetable oil (for frying)
  • Fresh lemon wedges and chopped parsley (for garnish)

Instructions
 

  • Trim fat from chicken. Pound to 1/2-inch thickness. Season with salt, and pepper.
  • Prepare the breading station: flour, eggs, breadcrumb-Parmesan mix.
  • Coat chicken: flour, eggs, breadcrumb-Parmesan mix.
  • Heat oil. Fry chicken for 3-4 mins per side.
  • Drain on a paper towel. Serve hot with lemon, and parsley.

Notes

  • Make the chicken soft for a better taste.
  • Cover it evenly with breadcrumbs for a crispy outside.
  • Use a hot pan to make it golden brown.
