Ingredients
  

  • Boneless, skinless chicken breasts (about 1 pound)
  • 1 Medium onion (finely chopped)
  • 1 Green bell pepper (diced)
  • Cloves garlic (minced)
  • 1 can  Tomatoes (diced)
  • 1 cup Chicken broth
  • 2 tablespoons Vegetable oil
  • 2 teaspoons Cajun seasoning (adjust to taste)
  • 1/2 teaspoon  Dried thyme
  • 1/2 teaspoon Dried oregano
  • Salt and pepper (to taste)
  • Cooked rice (for serving)

Instructions
 

  • Preheat oil in a large skillet over medium-high heat.
  • Season chicken with Cajun seasoning, salt, and pepper.
  • Cook chicken in the skillet for 5 minutes per side.
  • Remove cooked chicken from the skillet and set aside.
  • In the same skillet, cook onion, bell pepper, and garlic.
  • Add tomatoes, chicken broth, thyme, and oregano. Simmer.
  • Slice chicken, return to skillet, and simmer for 5 minutes.
  • Taste and adjust seasoning. Serve hot over rice.

Notes

  • Take your time—it gets better as it cooks slowly.
  • Use fresh veggies—they make a big difference.
