- 2 Boneless, skinless chicken breasts (about 1 pound)
- 1 Medium onion (finely chopped)
- 1 Green bell pepper (diced)
- 2 Cloves garlic (minced)
- 1 can Tomatoes (diced)
- 1 cup Chicken broth
- 2 tablespoons Vegetable oil
- 2 teaspoons Cajun seasoning (adjust to taste)
- 1/2 teaspoon Dried thyme
- 1/2 teaspoon Dried oregano
- Salt and pepper (to taste)
- Cooked rice (for serving)
Preheat oil in a large skillet over medium-high heat.
Season chicken with Cajun seasoning, salt, and pepper.
Cook chicken in the skillet for 5 minutes per side.
Remove cooked chicken from the skillet and set aside.
In the same skillet, cook onion, bell pepper, and garlic.
Add tomatoes, chicken broth, thyme, and oregano. Simmer.
Slice chicken, return to skillet, and simmer for 5 minutes.
Taste and adjust seasoning. Serve hot over rice.
