Course Breakfast

Equipment

  • Medium pot
  • Wooden spoon for stirring
  • Measuring cups and spoons
  • A small bowl
  • A whisk
  • Serving bowls

Ingredients

  • 1 cup of old-fashioned rolled oats
  • 2 cups of milk or water.
  • half cup of pure pumpkin
  • 2 tablespoons of maple syrup
  • 1 teaspoon of cinnamon
  • half teaspoon of pumpkin pie spice mix
  • a pinch of salt
  • half teaspoon vanilla extract

Instructions

  • Measure all ingredients before you start cooking now.
  • Open your pumpkin puree can and set aside.
  • This makes cooking much faster and easier overall.
  • Pour milk into your pot on medium heat.
  • Let it warm up but don't boil yet.
  • This takes about 2 minutes to heat properly.
  • Stir in the oats when milk gets warm.
  • Mix them well so they don't stick together.
  • Let them cook for 3 minutes while stirring.
  • Add the pumpkin puree to your cooking oats.
  • Stir everything together until it's completely mixed well.
  • The color will turn beautiful orange now gradually.
  • Sprinkle in cinnamon and pumpkin pie spice blend.
  • Add the salt and vanilla extract as well.
  • Mix everything very well for even flavor distribution.
  • Pour in maple syrup and stir it through.
  • Cook for 2 more minutes until nice thickness.
  • Remove from heat when it looks creamy enough.

Notes

  • Use real pumpkin puree, not pumpkin pie filling.
  • Pie filling has extra sugar you don't need.
  • Stir your oatmeal often to prevent burning badly.
  • Add more milk if it gets too thick.
  • Top with nuts or seeds for extra crunch.
  • Try fresh whipped cream on top for treats.
  • Make it ahead and reheat in the morning.
  • Add a banana for more natural sweet flavor.
  • Use coconut milk for a dairy-free version easily.
