In this blog, I will share with you a Yellow Velvet Cake Recipe that is extremely delicious. Yellow Velvet Cake is a super soft and tasty cake that's like a fluffy cloud. It's a classic velvet cake, but it's special because it's a beautiful yellow colour.

Ingredients
  

  • Large eggs
  • 1 cup Milk
  • 2 1/2 teaspoon Flavouring (vanilla, almond, lemon, orange... your choice)
  • 3 cups Sifted cake flour
  • 4 teaspoon Baking powder
  • 1 1/2 cup  Superfine sugar
  • 3/4 teaspoon Salt
  • 12 tablespoon Unsalted butter (room temperature cut into cubes and softened)
  • 1-2 tablespoon Lemon or orange zest (optional)

Instructions
 

  • Preheat the oven to 350°F. Grease and line two cake pans.
  • In a 4-cup bowl, mix eggs, 1/4 cup milk, and vanilla. Set aside.
  • In your mixer, combine flour, baking powder, sugar, and salt. Mix briefly.
  • Add butter and 3/4 cup milk. Mix until moistened. Increase speed, beat 1.5 minutes.
  • Gradually add egg mixture in three batches. Beat after each addition.
  • Pour into pans. Bake for 30+ minutes until light brown and springy.
  • Cool in pans for 10 minutes, then transfer to racks.
  • Cool completely. Frost and enjoy or freeze for up to 2 months.

Notes

  • Make sure your ingredients, especially butter and eggs, are not too cold. This helps make a smooth batter and a yummy cake.
  • Beat the batter until it's light and fluffy. This step makes the cake super soft, just like Yellow Velvet should be.
  • Get the best ingredients you can find. Fresh eggs and good butter make the cake rich and tasty.
