- 4 Large eggs
- 1 cup Milk
- 2 1/2 teaspoon Flavouring (vanilla, almond, lemon, orange... your choice)
- 3 cups Sifted cake flour
- 4 teaspoon Baking powder
- 1 1/2 cup Superfine sugar
- 3/4 teaspoon Salt
- 12 tablespoon Unsalted butter (room temperature cut into cubes and softened)
- 1-2 tablespoon Lemon or orange zest (optional)
Preheat the oven to 350°F. Grease and line two cake pans.
In a 4-cup bowl, mix eggs, 1/4 cup milk, and vanilla. Set aside.
In your mixer, combine flour, baking powder, sugar, and salt. Mix briefly.
Add butter and 3/4 cup milk. Mix until moistened. Increase speed, beat 1.5 minutes.
Gradually add egg mixture in three batches. Beat after each addition.
Pour into pans. Bake for 30+ minutes until light brown and springy.
Cool in pans for 10 minutes, then transfer to racks.
Cool completely. Frost and enjoy or freeze for up to 2 months.
- Make sure your ingredients, especially butter and eggs, are not too cold. This helps make a smooth batter and a yummy cake.
