Shred zucchini with grater into big bowl.
Mix zucchini with salt and let sit.
Wait 10 minutes for water to come.
Squeeze zucchini in towel until very dry.
Add flour, cheese, and eggs to zucchini.
Mix in onions, garlic, and parsley well.
Add pepper and mix everything together.
Heat oil in large pan over heat.
Drop spoonfuls of mix into hot oil.
Cook for 3 minutes until golden brown.
Flip patties carefully with spatula tool.
Cook other side for 3 minutes more.
Put on paper towels to drain.
Serve hot with sauce you like.
