You need the following things to make this scrumptious jelly:
- Ripe mayhaw berries = 2 gallons
- Butter = 1 tsp
- Sugar = 5 cups
- Pectin = 1 package
- Red food drops = some drops (optional)
Step-by-Step Guide for Making Mayhaw Jelly Recipe
Once you are done with extracting juice from the mayhaw berries, the next procedure is simple.
Follow this set of instructions to make this delicacy:
For Juice:
Step 1
Wash all the mayhaw fruit.
Step 2
Take a large pot and add washed mayhaw berries to it. Then fill the pot with water. Keep the level of water a few centimetres above the berries.
Step 3
Boil the berries in the pot until they become tender.
Step 4
With the help of a strainer or colander, strain the seeds and pulp of the mayhaw berries from the boiled water.
Step 5
Seize and store the juice of mayhaw berries in another container. Again pass it through a fine strainer so that it becomes completely transparent and clear.
Step 6
If you want to get a brighter red, you can add the food colouring drops to the juice and stir it.
For Jelly:
Step 1
In a 7 quart saucepan, add 4 cups of cleared mayhaw berries juice and then add the pectin in it. Stir well.
Step 2
To clear the foam, add butter to the juice. It will reduce the foam.
Step 3
Turn the flame to high and boil it so that it is boiling. Keep stirring.
Step 4
Then add all the sugar while still stirring and again boil at high flame precisely for 60 seconds.
Step 5
Transfer the saucepan away from the stove and remove foam if any.
Step 6
Transfer the pre-jelly mixture to small jars immediately so that it does not harden in the pan. Then tightly close the double lids of the jars.
Step 7
Take a stockpot and place all the jars inside it. Then add boiling water in it so that it is 2 inches above the jars.
Step 8
Place the lid of the stockpot and boil on a low flame. After gently boiling, keep processing for 5 minutes.
Step 9
Carefully remove the jars from the water and let them cool. Check to see if the jelly has been processed well.
Step 10
Reprocess if required or refrigerate and use.
