- 1 pound Penne pasta
- 2 Chicken breasts (boneless, skinless and cut into small pieces)
- 1 tablespoon Olive oil
- 1/4 teaspoon Cayenne pepper
- 1/4 teaspoon Garlic powder
- Salt and pepper (to taste)
- 1 Red bell pepper (sliced)
- 1 Green bell pepper (sliced)
- 1/2 Red onion (sliced)
- 1/2 cup Mushrooms (sliced )
- 1/4 cup Jalapenos (diced)
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese (grated )
- 1/4 cup fresh parsley (chopped )
Cook pasta as per package directions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat.
Add chicken, season with cayenne, garlic powder, salt, and pepper. Cook until browned, 5-7 mins.
Add bell peppers, onion, mushrooms, and jalapenos. Cook until the veggies are tender, 5-7 mins.
Pour heavy cream into the skillet, and stir to combine. Add cooked pasta, and toss to coat.
Sprinkle Parmesan cheese over pasta, stir to combine. Cook for 2-3 more mins until the cheese melts.
Garnish with chopped parsley and serve immediately. Enjoy!
