- 4 cups or 3 Medium Zucchini (Shredded)
- 4 Large Eggs
- 1 cup Bisquick
- ¼ cup Olive Oil
- 1 Onion (Chopped)
- 1 cup Cheddar Cheese
- ½ cup Parmesan Cheese
- 1 teaspoon Italian Seasoning
- Salt and Pepper (To Taste)
Preheat the oven to 350°F.
Grease a 9x13-inch baking dish with cooking spray.
Grate zucchini and chop onions. Set them aside for later.
In a large bowl, combine eggs, olive oil, and Bisquick.
