Ingredients
  

  • 4 cups or 3 Medium Zucchini (Shredded)
  • Large Eggs
  • 1 cup  Bisquick
  • ¼ cup  Olive Oil
  • Onion (Chopped)
  • 1 cup Cheddar Cheese
  • ½ cup  Parmesan Cheese
  • 1 teaspoon  Italian Seasoning
  • Salt and Pepper (To Taste)

Instructions
 

  • Preheat the oven to 350°F.
  • Grease a 9x13-inch baking dish with cooking spray.
  • Grate zucchini and chop onions. Set them aside for later.
  • In a large bowl, combine eggs, olive oil, and Bisquick.
  • Add zucchini, onion, cheddar, parmesan, and seasonings. Mix until well combined.
  • Pour the mixture into the prepared dish. Bake for 40 minutes until golden brown.
  • Let it cool, then cut into squares.

Notes

  • Slice zucchinis evenly. Cook them better.
  • Add more cheese if you like. It's about your taste.
  • Try different seasonings. Adds more flavour.
